Originally established in Byron Bay by Brisbane-born, now Paris-based property developer Vincent Rae more than 20 years ago, Rae's on Wategos has dropped its apostrophe. It's a subtle flourish that marks the finalising of substantial change.

A 2017 renovation overseen by interior designer Tamsin Johnson took away clutter and brought in the light, furnishing the already highly desirable exclusive luxury holiday spot with hand selected, imported or custom made pieces to make it feel like home.

Since the completion of the major works, there's been a total kitchen overhaul in line with the appointment of new head chef Jason Barratt (previously of Attica, Stokehouse and Hector's Deli). His menu is Mediterranean-influenced with seafood, seasonality and local ingredients its driving characteristics.

The restaurant has also had a touch-up with new furniture by MCM House and Villa Blanc and Lucy Folk-designed uniforms on staff. Also new is Raes Cellar Bar, utilising the space that was once the hotel's cellar. It offers an oyster and sashimi menu alongside gelato, Champagne Perrier-Jouet and a selection of cocktails. It's available as a private dining room.

The pool area has also had a revamp and the property has a Lexus RX 450hL hybrid SUV on hand for guests' arrival and departure transfers, as well as trips in and out of town by the in-house chauffeur, who will also be on hand for non-staying restaurant guests needing a lift to and from Byron town centre and surrounding areas.
