The country's newest MGallery by Sofitel has opened and its location is an unconventional choice, about 30 kilometres from Sydney's central business district.

The eight-level, equine-themed William Inglis Hotel, MGallery by Sofitel, owned by thoroughbred horse sales company William Inglis & Son and operated by multinational hotel group Accor Hotels, is Sydney's newest luxury boutique hotel and south-west Sydney's first luxury hotel.

The hotel has 144 guest rooms; each room is named after champion racehorses sold through the Inglis sales ring and features a unique theme, including art works of the horse and winning jockey silks. There are 122 superior rooms, eight executive king suites and 13 superior king suites, with the biggest room being the presidential suite; a 30-square-metre room that carries the name of Australia's most famous champion thoroughbred racehorse Black Caviar.

The new MGallery is part of a $140-million new precinct area Riverside Stables developed by William Inglis & Son, which also houses a thoroughbred sales complex. The company moved its equine business from its five-hectare Newmarket property in Randwick to Warwick Farm last year.

The full service William Inglis Hotel pays homage to the Inglis family's Newmarket heritage, with dining venues and rooms named after its Newmarket stables, and details including door knobs and a two-storey bookcase that references the history of the Inglis business and the thoroughbred industry in Australia.

Along with the presidential suite on level eight is the hotel's rooftop bar and pool deck, the Chiltern Pool Deck & Bar. The space features a 20-metre outdoor pool that overlooks the 120-hectare Warwick Farm racecourse that adjoins the property, as well as cabanas and sun loungers to create a resort-like feel. The 24-hour gymnasium and day spa facilities are also on the top floor with views over the stables and racecourse. The William Inglis day spa has five treatment rooms and is open to non-hotel guests by treatment appointment only.

The hotel's main restaurant, the Newmarket Room, headed up by chef Samuel Bull, offers all-day dining with a paddock-to-plate menu concept. The restaurant is a nod to the Inglis' Randwick home with the design and theme centring on the original Newmarket site with an adjoining alfresco dining area, the Newmarket Gardens. The hotel also features a whisky and wine bar, the 1867 Lounge, and a cafe on ground level, the Heroic Cafe.

The hotel will soon introduce a morning tour of the stables that will include time for staying guests to watch the horses train called Memorable Moment.

The addition of an MGallery hotel in south-west Sydney is expected to help boost business and leisure tourism in the area. Outside of the Sydney CBD, Parramatta and Sydney Olympic Park are the only areas with top-tier hotels.
