Canadian-born Tadd Chapman is the father of Mexican fusion cuisine. He opened his first Los Cabos restaurant, The Tulip Tree, in 1998. His further restaurants, including Habaneros Gastro Grill, Don Sanchez and Retro Burger, have established him as a celebrity chef in Mexico. See taddchapman.com.

WHAT IS YOUR FAVOURITE TABLE IN LOS CABOS?

My favourite table in Los Cabos depends on what I am in the mood for. I am a sushi lover and the best Japanese (with a Mexican twist) would have to be Nicksan. For fresh local seafood my favourite El Toro Guero​ – super casual but the seafood jumps off your plate and the beer is ice cold. See nicksan.com; no website for Toro Guero.

WHAT IS THE LOCAL FOOD DISCOVERY OF THE PAST YEAR?

Geoduck in Baja California Sur. Born and raised on the west coast of British Columbia, geoduck was a great local treat up north; I'm really excited to get our tank going and offer fresh live geoduck at Don Sanchez. (Geoduck is a type of saltwater clam.)

WHAT IS LOS CABOS' BEST-KEPT FOOD SECRET?

Los Cabos has become an incredible foodie town over the last decade. Many great chefs and restaurants to choose from; farm to table and ocean to table is the norm, not the exception. See www.visitloscabos.travel

When we can escape the confines of home, we love to head down to Medano Beach in Cabo San Lucas for a little R&R. The kids love playing on the beach and in the water (so do we) and we can always get a decent bite to eat and a well deserved cocktail.

WHAT IS YOUR FAVOURITE INDULGENCE IN LOS CABOS?

Every year the restaurant association hosts an event for about 2000 people called Sabor a Cabo at the beginning of December with over 40 restaurants and incredible winemakers getting together for charitable causes. For about $124 you get to eat and drink the night away with incredible live bands. Last year we had Chilean band La Ley performing.

WHAT SHOULD A VISITOR AVOID, FOOD-WISE, IN LOS CABOS?

I would stick to established restaurants and avoid street vendors; also make sure you get out of your hotel and check out the town. We have some great offerings.
