THE LOCAL FOOD DISCOVERY OF THE PAST YEAR?

I discovered shoyu caviar whilespending four days in the farms of Okayama and Hiroshima in Japan. At a local sturgeon caviar farm, I learned infusing the caviar with shoyu instead of salt creates an absolutely amazing mix of flavours between the caviar and the umami from the shoyu.

WHAT IS SINGAPORE'S BEST-KEPT FOOD SECRET?

Our consistency with keeping our heritage food alive from generation to generation is an effort not just from a niche group but the entire nation. We have a wonderful selection of food to offer, from local delights (laksa, chicken rice, chilli and pepper crab) to Indian, Malaysian, Peranakan, and western cuisine all in one city.

PLACE TO GO ON A DAY OFF?

FAVOURITE INDULGENCE IN SINGAPORE?

The original chicken curry noodle can be found at Heng Kee Chicken Curry Noodles in Chinatown . I grew up in the cultural precinct and have seen the creator cook the same curry broth every day for 30 years. WHAT SHOULD A VISITOR AVOID, FOOD-WISE, IN SINGAPORE?

As a food-loving nation, Singapore has high expectations of our food and beverage scene. With so much cheap and delicious local cuisine at our hawker centres waiting to be explored, I feel there is no need to visit a fast food chain.
