State borders may be closed and international tourists banned, but when a new hotel is ready, it still needs to open.

The Crowne Plaza Hobart, a 235-room hotel on the Tasmanian capital's Liverpool Street, was originally set to open in March but the outbreak of COVID-19 saw that pushed back several months.

The hotel opened, one of the biggest in Tasmania, on Wednesday after the implementation of new enhanced cleaning measures introduced globally by parent group IHG.

All rooms offer views of either the Hobart waterfront or Mount Wellington. These two attractions inspired the interior design of the hotel, with cool shades of blue, silver and grey representing the city contrasted with earthy shades of red and brown scattered throughout the property and inspired by the mountain. The lobby will feature works by local artists from the nearby Handmark Gallery.

The hotel will be the first in Hobart to feature a Club Lounge and it will also be home to Hobart's highest rooftop bar, Aura, along with two restaurants, the Deck and Core, led by local executive chef John Churchill with an emphasis on farm-to-table dining. There is also an emphasis on sustainability, with all organic waste from the bar and restaurant being dehydrated and used to feed the rooftop gardens.

The Crowne Plaza Hobart's general manager, Linda Collis, said preparing the hotel for opening amid the pandemic had been challenging.

"The road from signing to opening this hotel has been a longer one than expected, but we have received amazing support from the community throughout," she said.

Though state borders are closed, Ms Collis said there had been a "steady stream of bookings from Tasmanians who are treating themselves to a staycation, or simply coming in to experience our amazing restaurants and bars."

She said the hotel was now seeing bookings from interstate guests from late July. The Tasmanian government has set a tentative date for reopening the borders on July 24.

Two more Crowne Plaza hotels are set to open this year, in Sydney's Darling Harbour and in Adelaide.
