On the money for the Chinese New Year

There are now many airlines and flights between Sydney/Brisbane and southern China. There are many cheap fares, too. My wife and I would like to take advantage of this opportunity to see China during the Chinese New Year period. We would like to travel independently, taking in Hong Kong, Guilin, a Yangtze cruise and Yangshuo (pictured). Which airline and/or package would suit us?
