Katrina Ryan once headed the kitchen at Sydney's Rockpool, cooked privately for the likes of Nicole Kidman, and was a Spirit House chef and co-author. Ryan's seasonally driven approach is now on show at The Golden Pig (cafe and cooking school) in Newstead, Brisbane. See goldenpig.com.au. She offered Traveller her insights into seven of the tastiest dishes on offer in Brisbane.

1. SALSICCIA PIZZA, BECCOFINO

These guys make fantastic pizzas and since we moved to Brisbane it has been a favourite local. We often try different dishes and pizzas but this one is a constant – tomato, mozzarella, provolone, pork and fennel sausage and fresh rocket. See beccofino.com.au

2. WHOLE CRISPY FISH WITH CHILLI TAMARIND SAUCE, SPIRIT HOUSE

Crunchy, spicy, tangy, moist and spectacular, this dish never fails to impress and delight. The fish skeleton is left bare after every delicious morsel is picked at and devoured. See spirithouse.com.au

3. WHITE CUT CHICKEN WITH GINGER AND SHALLOT SAUCE, GOLDEN BARBECUE

We get our Chinese ducks from here for our signature toasted sandwich, featuring Chinese duck, chilli jam, provolone and coriander. But my favourite lunchtime feed is the white cut chicken. (157 Wickham St, Fortitude Valley)

4. ALMOND CROISSANT, LE BON DELICE

Jean Jacques Le Faou from Brittany and his Irish wife Kate opened this gorgeous little seaside patisserie in 2008. The almond croissant is hands down the best I've ever tasted. But it's only sold Wednesdays and weekends. See lebondelice.com.au

5. MARCHE DU MACARON MACARONS

These are sold beautifully gift wrapped in black tissue paper and boxes which set off the gorgeous colours. To-die-for flavours include salty caramel, coconut ice, macadamia praline and white chocolate. See marchedumacaron.com.au

6. EGGCETERA EGGS

We source these straight from the farmer, Tim Somes, who produces both eggs and pork from his free-range property in Allora on the Darling Downs. I eat a poached or fried egg nearly every morning for breakfast so these little beauties are highly treasured. See eggcetera.com

7. TURMERIC LATTE, GOLDEN PIG

South-east Queensland is one of the best ginger growing regions in the world and we source locally grown fresh turmeric and ginger to make our latte mix. We peel, slice, dry and grind it with cinnamon and white pepper to make a delicious coffee alternative. See goldenpig.com.au
