Brad Sloane started his apprenticeship at Silos Restaurant and Winery on the NSW South Coast. Winning apprentice of the year at 21, Sloane travelled to further his career, with highlights including working for Marco Pierre White at The Belvedere in Holland Park, London. Returning to Australia he worked at Hugo's Bondi Beach and alongside Matthew Kemp at Balzac before taking over Balmain's The River View Hotel as head chef. In 2012 he was named AHA Chef of the Year while working for the Balmain Pub Group, where he is currently the executive chef overseeing the group's four establishments.

MUST TRY

A Sunday session at The Balmain Hotel Beer Garden is perfect in summer for a nice social vibe, or a long lunch on the balcony at The Town Hall Hotel Balmain. For something with a group of friends, a quintessential inner-west experience at one of the many great micro-breweries such as the Batch Brewing Company in Marrickville is definitely something to add to the list. The General, on Marrickville Road in Dulwich Hill, is a relaxed eatery offering new dishes daily. The menu is ever changing with a giant menu of rolled butcher paper which is updated with what's on offer each day. Earl's Juke Joint in Newtown or the Marly for a fun Saturday night. Something closer to the city and often missed is The Little Guy on Glebe Point Road, a fun place to do drinks with friends and they supply free popcorn. BEST TIME TO VISIT

The best thing about the inner-west is that it caters for everyone and any time of year. There are rooftop bars, fireplaces to stay warm, inside and outside dining areas or beer gardens, which make it accessible and suitable for any occasion.

In summer I would recommend the rooftop bar at Websters to soak in the rays on a Saturday afternoon, or catch the ferry over to Balmain and walk Darling Street for Sunday brunch to find a nice favourite along the way.
