It's time to get full bottle again on the Sydney Harbour Marriott. In an overdue move, the heretofore under-the-radar hotel with a near unsurpassed location a short stroll from the Opera House, Circular Quay and The Rocks, recently spent $15 million on a refurbishment that includes three new and/or upgraded dining and imbibing venues.

Opened nearly 30 years ago, the newly-spruced Sydney Harbour Marriott now features what every hotel needs these days: a genuinely cool and relaxed cafe and bar. Three Bottle Man, which cleverly morphs into a sleek laneway bar on historic Bulletin Place, is named after J.F. Archibald's eponymous weekly publication founded in 1880. To reflect the history of its location, Three Bottle Man champions an all-Australian wine and beer list with local produce highlighted on the menu. Then there is Silvester's, a new 120-seat contemporary restaurant, its name a nod to the Silvester Brothers butcher and providore that once occupied the site of the hotel. It dominates the main, airy atrium area of the ground floor, leading from a spruced-up lobby.

Elsewhere, the interior of the iconic Custom's House Bar, a popular spot with office workers, has been also refreshed.Oh, and the moniker Three Bottle Man? It is named after the 18th-century British prime minister William Pitt (which the street outside the hotel, in turn, is named after). A man extremely fond of a drink, he was known for being a "three-bottle-a-day man". Now you really should be full bottle. See marriott.com.au
