Despite continuing regional tensions, more relaxed visa conditions have meant record numbers of tourists are entering Israel. The US, Russia, France, Germany and Britain top the countries of origin for entries, with 54 per cent being Christian. Chinese tourism is also on the rise.

In the Jaffa Port district, the new Setai Tel Aviv adds further allure to a place whose history is proving irresistible for so many. It inhabits the "Kishle", or "jailhouse" in Turkish, a complex considered one of the most important properties in Israel. Initially constructed as a fortress during the 12th century and touched by some of the most dominant empires in history, the original buildings, stone corridors and inner courtyard have been meticulously restored during a 25-year preservation process, which also included demolishing inappropriate modern additions. (Post the War of Independence it had been a police station.)

Extensive archaeological digs accompanied the restoration, yielding 12th century artefacts, now on display in the hotel.

The 120 guest rooms and suites either have views of the Mediterranean Sea, the historic Jaffa Clock Tower and Square, or the olive and citrus trees of the property's inner courtyards.

Guest areas include a stunning swimming pool looking out to sea and JAYA, a restaurant honouring Israeli food culture, and the culinary heritage of Jaffa and the property's Turkish roots. It also serves handcrafted cocktails and a traditional British high tea service.

Below the lobby, there is a full-service spa with seven treatment rooms, a traditional Turkish Hammam, and a fully equipped gym.
